  • 2 tbsp Shaoxing wine
  • 4 cloves garlic, crushed

  • 2 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp rock sugar
  • 1 cinnamon stick
  • 2 star anise
  • 1 orange peel
  • 1 red chilli, chopped
  • 500ml water
