Suan Cai Yu
Suan Cai Yu is a popular Chinese spicy fish dish that originated in Sichuan Province. It is made with fish fillets that are cooked in a spicy and sour sauce made from Sichuan pepper, ginger, garlic, soy sauce, vinegar and pickled vegetables known as suan cai. Ingredients
- 1 pound fish fillet, sliced into pieces
- 1/2 cup Sichuan pickled mustard greens (suan cai), rinsed and chopped
- 2 cloves garlic, minced
- 1 inch ginger, sliced
- 1 tbsp Sichuan peppercorns
- 2 green onions, cut into 2-inch pieces
- 3 dried red chilies
- 1 tbsp vegetable oil
- 1 tbsp Shaoxing wine
- 1 cup water or stock
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp cornstarch
- 1/4 cup water
